About The Red Velvet Cake

Renowned as a decadent dessert, with a crimson, velvety and crumbly texture, the red velvet cake is a classic American dessert. The cake originated in the late 19th Century when Devil’s food cake was a popular dessert. The Red color was accidently created in a chemical reaction between cocoa powder and buttermilk, and the classic Red Velvet is born. It soon became mainstream dessert, gaining popularity in the South during World War II when beetroot juice was used to enhance the moisture and redness of the cake.

Over the years, Red Velvet cake has been known as the signature cake at the Waldorf-Astoria Hotel in New York City, and Eaton’s department store in Canada sold this cake as their original cake with an exclusive recipe that remains a secret to this day.
